I really don't like that they used Joe Beef's name for this kind of restaurant (exclusive, expensive, and pointlessly excessive).
Joe Beef was the definition of a working-class hero: http://www.biographi.ca/en/bio/mckiernan_charles_11E.html
I've only been to two of the restaurants mentioned in this article: Liverpool House and Au Pied du Cochon.
They are two of my most favorite restaurants in the world, with the latter being my most favorite. I've never been able to get a seat at Joe Beef. I've heard it's "touristy" now but I'd still like to experience it.
I've never had the chance to visit Joe Beef, but they're brilliant.
Though I recall a heartfelt article from one of the owners who outlined how they had recently about-faced on their habits. They've gone sober and are focused on their health now and regret (not sure if that's the right word) of the excess they imposed in the way they did.[0][1]
Also, Bourdain gives quite the view into the 'old' Joe Beef. Worth a watch.
[0] https://sharpmagazine.com/2018/11/27/how-joe-beef-chef-david...
[1] https://www.cbc.ca/news/canada/montreal/david-mcmillan-opens...
The guys from Joe Beef were on Joe Rogan last year. It's an interesting talk. They are maniacs but I respect them
https://youtu.be/lzujdxJxLIQ
