I grew up with electric stoves, and had always found gas ones cumbersome, despite hearing much praise for it. I've always assumed it was a matter of what you were used to. In particular I like that electric stoves can have a very low setting. I make hollandaise without a double boiler, and have no trouble simmering soups for hours without scorching.<p>My point isn't to debate the merits, just to show that I assumed that if I spent time with a gas stove I'd learn it and come to think of them as highly as other people do. Interesting to learn that may not be the case, but is a least partly driven by marketing.
