I have been using an app called FitNotes on Android for all of my gym tracking for what must be about seven years now. It is very simple, has zero ads, and provides exactly the features I need for lifting without any unnecessary bloat. I'm not prompted to make an account, or sync anything to the cloud (unless I want to save a backup of my data somewhere like Google Drive, for example, which I do when switching phones). It's just a very pleasant, simple app to use without any superfluous bells and whistles or annoying UX flows.

Big fan of Micro[1] I use it all the time, it hasn't replaced IntelliJ yet but maybe one day...
1: https://micro-editor.github.io

Oak is the best meditation app on iOS even though it isn't as popular as Headspace and Calm.

Not sure how "mostly unknown" these are, but I use:
Work (Macbook):
- Coca: Keeps the screen on and bypasses the "screen lock after X minutes" thing that IT had set up. It's a quality of life adjustment when I'm trying to read something without the screen locking up after a minute. https://apps.apple.com/us/app/coca/id1000808993?mt=12
- Rectangle: Lets me move and resize windows using keyboard shortcuts or snap areas. https://rectangleapp.com/
Browser:
- Weava: Lets me highlight webpages and keep copies of them in a repository for future review. I've been reading a lot of docs lately and it's been a lifesaver. https://www.weavatools.com/
- Bypass Paywalls: Self-explanatory. Also available for FF. https://github.com/iamadamdev/bypass-paywalls-chrome
- Stylus: Can write custom CSS for webpages. You can use other people's styles, but I prefer writing my own in order to have greater control. Another quality of life adjustment when I don't want to stare at stark white documentation. Also available for FF. https://chrome.google.com/webstore/detail/stylus/clngdbkpkpe...
