Ask HN: What's the current best way to create a wiki-like collaborative guide?

I was thinking of creating a comprehensive guide for the topic I care about (how to build a house), but I know I'm missing some information (for example about legal topics). I was thinking of using google docs or notion to let people add/comment on selected topics, but I don't like that you have to create an account and the functionality is limited. I saw successful github repos with similar structure, but it may be too difficult for non-tech people. What's the current best way to collaborate, maybe something I can host like pytorch forum?
