I know there are a diverse array of devices, electronics, and software out there.<p>What methods (e.g., code auditing, checksums, testing/QA, etc.), if any, are used by election officials to convince themselves that the devices and software they are using are safe?

For the instant transport of votes in Germany: None. Cryptography is used, but its an fake. There was a talk at the 38c3 about it.
