Paprika oleoresin is orange when lightened even though it looks red at first, annatto as well, radish powder is purplish and smells terrible, beetroot looks dull muddy red, anthocyanins don't look red at alkaline ph and aren't oil soluble, madder is said to be toxic, cochineal disgusts me, are there other alternatives? Lycopene seems the best so far.
