Your best bet would be to pick an MVC framework for PHP and then read the documentation for it. MVC as an architecture isn't all that complicated, but different frameworks may implement slightly differently. Choosing a framework, reading the documentation and playing around with it on your own will help you understand the concept much better than a book.
