Maybr an unpopular opinon, but tweaks to GNOME are table stakes, I don't think anyone is going to notice a change in bootloader, and Pipewire had tons of issues with audio popping in Flatpak apps like Discord when i last tried it. A new desktop in Rust is interesting, and I like the idea of a corporately-supported Linux desktop, but Pop! is fundamentally 95% like any other Ubuntu remix. It has a long way to go and doesnt solve any of the fundamental problems with Linux desktops, namely hardware and software support. I don't really get why people are so excited.
