not saying this is the answer but some components in processed food weaken the blood-brain barrier and stuff that's supposed to be filtered ends up in the brain and activating its immune system, which might explain the plaque in the brain.
I used to go to an elderly home every second day, the stuff they eat fits this. Elderly homes are forced to cook as cheaply as possible. Also ppl want to be entertained and food is entertainment, so they get cake at least every other day.
Their breakfast usually consisted of white bread and margerine with gelly. The brain is incredibly sensitive to sugar as well, so I can imagine this is a factor as well.
