1) Low UI latency - I think this is partly why I dislike electron apps
2) Good UX (same principles apply everywhere)
3) Does something useful
4) Easy to install it and easy to pay for it (I love paying for apps, but only when it's easy. App Store payments are easy, Apple Pay or Stripe on web is easy. I don't want to pay until I know the app is good, but then I'm happy to pay after that - so either a small payment up front, or a larger payment after a trial. And I think it shouldn't let me get too much value for free!)
Some notes:
I used sublime text for ages before paying because their payment process wasn't how I prefer to pay. I'm used to the convenience of apple pay or shopify pay or amazon buy with one click, and prefer things that are similarly easy to buy. (I finally bought it after a while.)
Apps I pay for: Rewind.app, 1Password, TextSniper (might've been free, can't remember), ClipBar (might've been free, can't remember), Sublime Text, Spotify, Time Out. Free apps I use and like: Discord, Telegram, native macOS apps like Messages and Notes and Safari and Reminders and FaceTime, VLC, iTerm2, Chrome.
