I'm not a fan of the new sound theme (Ocean), double-click to open rather than single-click is an unfortunate default because it's an RSI nightmare, I hate that the new desktop grid cannot be bound to a hot corner (or screen edge, whatever), and I really don't like that they removed the gamma options from system settings.
It also really sucks that the documentation for KWin scripting hasn't been updated, but I get that they had little time to prepare for the big release (only, what, half a year? Impossible to update docs on such short notice).
But Plasma 6 doesn't crash anywhere near as often as Plasma 5 did when it was newly released, so at least by that metric I'd say it's better. But the greatest improvement is probably whatever magic they did in the hotkeys handling. Launching an Emacs client with Super+E now just works, that's wonderful.
