Ask HN: How do I input custom text to ID3 and MP3 Encoding tags in an MP3?

So I was looking at how header frames work in MP3s and wanted to see if there was anyway to input custom text into the Encoding With tag and the ID3 tag? I have a couple of ideas, but was curious if any of you knew how to do it effciently. Thanks!
